They probably understand all HTTP status codes. Question is: how do they
interpret them? There's been so much talk about them not correctly
implementing 302 and 301 redirects that I would be VERY concerned about
feeding them a less obvious 503. On the other hand, I simply do not
understand the purpose it serves in your case. Just give them 404 Not
Found if you want them to come back and check on the page again. If you
want them completely abandon the page, give them 410 Gone
