When searching for kooikerhondej with google I get results with
sub-links. How did they do that ?

Ahh that explains ...

Why would they do such a thing ? You probably wont understand Dutch but
this page is like millions of others and not real important at all.

Is there a way to fascilitate or request this behaviour ? Did they
submit their site structure ? Does it have a name ?

Being #1 for a single keyword seems often to do the trick. But I also
guess that it's done manually for now (you have to be on an allowed list
as well).
