How to pay foreigners?

I found some Chinese individuals in China to do a
Chinese-involved web project. But I don't know how to pay them
up. If I send them a check with a US dollar amount, I believe
they'll have a hard time cashing it or depositing it. Ideally I
should just pay them Chinese dollars. Whoever have had a similar
situation please share some ideas.
