How to change Character set

Hi,
I want to change Character set in DreamweaverMX,

Dialog window: Edit/Preferences/Font - Font settings.

But when I change setting eg. to Central European and click OK
and than again open Dialog window - I saw no changes.

So how coud I change Character set?

Edit > Preferences > New Document > Default Encoding.
