Dreamweaver Contact Form

I thinking of making a form for my school website.

What i would like to happen is like the visitors to fill in their email
address and then like choose from a list of letters available which they then
just click on submit or something and then that letter is emailed to them.

Can this be done? Any ideas on how I would be able to do this? If anyone knows
of any tutorials doing this sort of thing then please let me know.
