Dreamweaver 8 Behaviors Defined

Does anyone know here I can find definitions of the behaviors? For instance,
the onKeyPress behavior - is there a way to define a specific key press? There
doesn't seem to be any specific help in the product or online help.

Those are events not behaviors. They are all defined by javascript, not DW.
And as far as I know, there is no way to filter for specific keys.
