If your data contains ASCII characters only, you can even declare it as
UTF-8 too, since ASCII characters have the trivial single-octet
presentation in UTF-8.
But using iso-8859-1 is safer. Should you happen to enter a non-ASCII
character using NotePad, then it'll hardly be in UTF-8 encoded form.
